Shrimp with feta and spinach

  • 1 tablespoon olive oil
  • 250g medium shrimp
  • 3 Cloves garlic (smashed)
  • 2 teaspoons fresh thyme leaves (minced)
  • black pepper (freshly ground)
  • 1 Punnet cherry tomatoes (halved)
  • 6 green onions (sliced)
  • 1 handful kalamata olives (pitted and halved)
  • 1/2 cup feta (crumbled)
  • 1/2 bag baby spinach
  • 1 teaspoon red wine vinegar


1. In a skillet heat the oil over medium heat until shimmering. Add the smashed garlic and cook until lightly browned. Remove garlic.
2. Add shrimp and cook until starting to turn pink. Add thyme leaves and a few grinds of pepper, stir, then the tomatoes and green onions. Cook until the tomato liquid starts to thicken, about a minute.
3. Stir in the olives and feta then add the spinach. Cover and cook until the spinach wilts, about a minute. Add the vinegar.
4. Serve with toasted pita bread.
