Shrimp with feta and spinach

Ingredients
- 1 tablespoon olive oil
- 250g medium shrimp
- 3 Cloves garlic (smashed)
- 2 teaspoons fresh thyme leaves (minced)
- black pepper (freshly ground)
- 1 Punnet cherry tomatoes (halved)
- 6 green onions (sliced)
- 1 handful kalamata olives (pitted and halved)
- 1/2 cup feta (crumbled)
- 1/2 bag baby spinach
- 1 teaspoon red wine vinegar
Directions
1. | In a skillet heat the oil over medium heat until shimmering. Add the smashed garlic and cook until lightly browned. Remove garlic. |
2. | Add shrimp and cook until starting to turn pink. Add thyme leaves and a few grinds of pepper, stir, then the tomatoes and green onions. Cook until the tomato liquid starts to thicken, about a minute. |
3. | Stir in the olives and feta then add the spinach. Cover and cook until the spinach wilts, about a minute. Add the vinegar. |
4. | Serve with toasted pita bread. |
