I recently discovered the Bushbok Sweet Potato at Tesco, which is more like the sweet potato I’m used to (flesh is white, not orange – to me those are yams) and hold up well when baked as fries…I think they’d be great for this dish so I’m gonna try it! :) Thanks for the inspiration!
