Pieminister pies are popping up in Dublin at various lunch markets and food shops. I’m in a Heidi Pie phase myself. Love that goat cheese, sweet potato, spinach, red onion and roasted garlic . They’re available at the Thursday food market on Hatch Street, served with mash and mushy peas; they weigh about half a stone. The pies come in a cute box which says “This pie belongs to…” and I really wish the guy would write my name on my box. Maybe next week I’ll take a marker and ask him to do so. All of the Pieminister pies sound amazing and the names are fun to say–Henny Penny! Moo & Blue!–so I really should branch out.

Pieminister also does seasonal pies and has come out with flavors to celebrate the upcoming royal wedding. While I’m not too fussed about those particular nuptials, I was charmed at the notion of creating a pie to celebrate a blessed union. What would a gunternation wedding pie have contained?

I want our pie to celebrate the locality and also the era of the wedding, so what did September 1995 in Alabama taste like? My first thought–pork BBQ. Defo pork BBQ. And I remember eating a lot of black beans in the early 90s, so in they go. We planned a Fall wedding, so some butternut squash might be nice. And of course onions and garlic because everything is better with onions and garlic.

Then to toss in a bit of heritage–jalapenos to represent my hot Texas upbringing, and serve the pie with the North Alabama vinegar slaw popular in Bill’s hometown of Huntsville. How can that not be delicious? And for the name–Wedded Bliss. Awwwww.

Now for the sweet pie. We had Johnny Ray’s (now Baby Ray’s in Birmingham) pies at our rehearsal dinner, and a carrot cake wedding cake. Lemon pie is my favorite, Bill enjoys coconut, so perhaps a layer of carrot cake with coconut and a layer of lemon custard. This may have to be a topless pie, and what if the pastry contained a bit of autumnal spices–cinnamon, nutmeg, allspice? Lemon Spice pie!

Now I just need to tweet my ideas to @pieminister.

    This is fun. I like imagining what should be in my celebration pie! I’m thinking seafood. Shrimp, scallops, green onions. Maybe a gumbo pie. Can I have gumbo pie for breakfast?

    I love your Wedded Bliss pie! I had one of the Moo & Blue pies a few weeks ago at the Howth market and it was very tasty. I definitely want to steal their idea of adding blue cheese to my next beef stew.
